Using OpenSimulator and consumer-level monitors and graphics/computing hardware, Rich White of Greenbush Labs built a VR cave for under $15,000. Take a look:

Rich White is one of those innovators who is "really doing it". he works with several schools, speaks at conferences all the time, and is just generally very active in implementing real workable solutions for the classroom
his approach, like the one you mention is even broken down by cost and is fairly reasonable in this economic time. i spoke at a conference last year where a vendor was holding a session using a special 3D screen that cost $20k (just for the screen). unfortunately, his screen was shipped to the wrong place and he could not demo it. i was surprised at the number of administrators ready to spend the $60k for that entire system!
and it only could show 3D, it was not immersive like Rich's example above!

I can think of a lot of applications for which that would be an awesome setup.
None of them involve the SL/OpenSim architecture.
