The Rift has twice the resolution of the Quest. For people who need the quality (e.g. professional applications of VR) but not the portability, the Rift's sales will not be cannibalised. We also have no idea just how well the Oculus Quest will play with controllers other than the paddlesticks that originally came with it. It's all still up there in the air, and it is so potentially exciting.

Just responding to the comment above, while it's true the Rift S has a better resolution than quest, it's also LCD, while the Quest is OLED. I personally find OLED screens to be more immersive in VR (black = no light) vs LCD (black = field of grey). I find this so much more immersive that I'll take a resolution hit in favor of it.
But that's a personal opinion.

I suppose it's primarily about what you use VR for.

And this is pretty much why I HAVEN'T invested in an VR setup. As the tech gets fine-tuned, it will make previous sets obsolete. I don't have that kind of money. And those that follow upgrades blindly should probably think about who they're making wealthy. Classic 3D works just fine for me. I'm still holding out for a set of AR glasses.
